Preheat oven to 350F
Grease cookie sheets
1 box spice cake mix
4 egg whites (can use 2 whole eggs for chewy or 3 whole eggs for ‘cakey’ cookies)
1 c quick-cook oatmeal
1/2 vegetable oil
1/2 c raisins
Combine cake mix, egg whites, oats and oil in large mixing bowl. Mix until blended.
Stir in raisins.
Drop by rounded teaspoonfuls onto prepared cookie sheets.
Bake 7 to 9 minutes or until lightly browned. Cool 1 minute on cookie sheets. Remove to cooling racks; cool completely.
Recipe Tweaks
Replace raisins with dried cranberries or other raisin-sized dried fruit
Replace raisins with small can of pumpkin (not pie filling)
Add well-squeezed diced apples (about 1c) or stir in 1/2 c of applesauce (cut oil to 1/4 c)
Stir in 1/2 c peanut butter (or almond or cashew butter)
Add nuts
