easiest cheesecake ever

      my MIL gave this to me years ago. It was originally on a Philly brand cream cheese box. I don’t use name brand anything so you can do what you want 🙂

      preheat oven to 300* you will need a 9″ springform pan.

      crust
      1 package (not the whole box!) of graham crackers
      1/3 c sugar
      1/4 c melted butter.

      crush graham crackers. I use my food processor, it works great for this. add sugar and melted butter. pulse/blend until completely mixed. press into spring form pan. i go up the sides just a little.

      filling
      2 8 oz pkgs cream cheese (softened)
      1 can sweetened condensed milk
      1/3 cup lemon juice
      3 eggs

      beat the softened cream cheese until smooth. add sweetened condensed milk, blend. add lemon juice, blend. Add eggs and beat until completely blended in.

      pour into springform pan. Bake for 50-55 minutes (until set). There may be a little bit of cracking on the edge but not much.

      cool well. serve with your favorite cheesecake topping (my favorite is blueberry pie filling).

      *tip for cutting…….use dental floss or heavy button and rug thread to cut with. it makes a much cleaner cut.
